Chicken and Pak Choy Stir Fry
Today was one of those days where I get stumped over what to cook for dinner. I find that when I got married, my brain has been working on overload trying to come up with different dishes, just so that I don't get too repetitive.
There were 2 main ingredients in my head today and it was chicken and pak choy. At first I thought I would make chicken the main dish and pak choy the side dish as I usually do. But then again, I still had some leftover soup from last night. So I thought, you know what, lets just make chicken stir fry. Easy and simple.
Usually when I make chicken stir fry, it would be with broccoli, carrots and button mushrooms. So making it with pak choy was something new for me. Then, on to the internet I went, and I started to search for stir fry recipes with pak choy and I stumbled upon this recipe.
Honey Chicken With Pak Choy.
Changed the recipe a bit by adding oyster mushroom and chillies (coz we like our chillies). I also cooked the pak choy in with the chicken towards the end instead of blanching it and added cornflour to thicken the sauce.
And I have to say, this is the first time where my chicken stir fry actually turns out like the proper ones that you would get in a Chinese restaurant.
